You'll need...
2 med. sweet potatoes
4 large carrots sliced
1 cup of celery sliced
1 cup of mushrooms
1 cup of any available vegetable
Add garlic, dill and sage to taste.

Cut all the vegetables into
a stew pot, keeping water above level of the veggies. Let simmer for an
hour or so.
Add 1 half cup of whole long
grain rice and simmer another half hour. You can add a lowfat sour cream
or eat as is, with whole grain crackers. Keeps in the fridge for
quite a while.
